Jonathan, In the light of what has been happening over the last few days in terms of high street retail disasters this is a very timely, inuative and perceptive overview. I watched the feature on Newsnight last night and it was spot on in terms of the shift in retail from high street to "On Line" for specific products .... Today yet another major brand goes into administration......

I totally agree with you that consumers are now visiting the major shopping centres not just to shop, they want much more.....an experience...... In terms of major purchases they may still visit shops, but are more more likely to order on line using a credit card that will give them a degree of consumer protection - HMV & other Retail casualties may not honour previously purchased Gift Tokens or Cards - But if you paid for them using a Credit Card - you will still be protected.....

A few years ago it might have been a shopping visit with a meal or a snack tagged on - now it is far more likely to be a visit to to the cinema in the same complex, perhaps preceded with a meal, or maybe a drink enjoyed afterwards - some shopping might still be browsed... but that may not be the major reason for visiting the centre unless you are sucessful in attracting followers of a really strong retail brand in fashion, furnishings & lifestyle or FOOD. To enhance the "experience" element of visits to food service outlets, perhaps legislation allowing live music of all genres to attract all ages should be encouraged & licencing restrictions relaxed - It does not have to be a late night licenced venue - I would rather go home at 11pm having experienced some great music, entertainment & food, than drink to 1am. Disposable income is not limited to just the Teens and Twenties........ Food and Fun for the Forty's and Fifty's is just as important and potentially more profitable in terms of revenue in terms of Food Spend for the Hospitality Industry.....

Thanks for a great article

Strictly from a customer's viewpoint, the change hasn't been that dramatic. As someone who is partly an Hispanophile, it still only goes part of the way, especially for people of a certain age who will forever associate tapas with small bars, fantastic ingredients and incredibly cheap prices. Sadly, this is where nearly all current restaurant chains fall down. They all offer meals that are way overpriced for what is on offer. One would have thought the advantage of superior buying power would allow them to offer quality food at a fair price, instead of which, the over inflated management/investment structure leads to (often) poor food at heavily inflated prices. In all fairness, most of the food offered at La Tasca is probably worth just over half of the indicated menu prices, so I for one, will only eat there if the food is on offer.

When exactly did the 100-150% gross profit associated with restaurants suddenly need to be 400%/500%/600% or more?
